The cost of a bespoke cake is so different to a cake bought from a supermarket, why is that?

Firstly the ingredients – I cost up how much the cake will take to make not just for the sponge, but the fillings (buttercream, coulis, ganache, jam…), the covering (sugarpaste, ganache, buttercream, marzipan, chocolate…), decorative materials (edible colours, dusts…), the cake board, box, ribbon, tape, edible glue etc.

I use good quality ingredients, for example chocolate ganache is made using Callebaut Belgium chocolate, coco powder with a high fat content will be found in chocolate cakes and the sugarpastes used to cover cakes include Kluman and Balter, Saracino and Couture. All my cakes are freshly baked to order.

Secondly it takes time to design a cake, buy all the materials needed and make the cake. The more complex the design, the longer it takes to make.

Lastly there are the electricity, gas, water and cleaning costs.
