First project – cupcakes fit for a wedding

Last Sunday my brother and sister in law got married at the gorgeous Gosfield Hall in Essex. They asked me to create some cupcakes that were gluten and dairy free to be served alongside the main cake as a child and allergen friendly alternative. Their brief was to encapsulate the flavour of a traditional Victoria sponge and for the buttercream on top to incorporate their wedding red.

Like a strange science experiment, I made about 6 different variations and then asked them to come and taste test them. The winning combination happened to be the easiest to make!

Gluten and dairy free doesn’t mean complicated- so many everyday items are free from, but we don’t realise
Whilst the cakes were hot they were injected with strawberry jam
No this wasn’t a mess free process 😂 everything was so sticky!
Travelling the 1 1/2 hours to the venue, I realised the buttercream needed to be cooled down – cue the air con
